Skinny Mac n’ Cheese with MacKenzie-Childs

One of my goals for the new year was to order out less, and cook more. It’s so easy to fall into the habit of ordering takeout night after night. I knew it would be much easier to get into the swing of cooking if our kitchen was stocked with all the best (and prettiest) tools. Enter MacKenzie-Childs. The definition of whimsical. Their designs not only bring color and detail to our place, but for once I feel like an adult with cookware that can go from stove to tabletop. We live in a NYC apartment with limited space so being able to serve dinners in their beautiful cookware, without having to transfer the food to serving platters has been a dream.

It is so much easier to prepare and cook meals when you’re using quality cookware. When I swapped my basic pots and pans starter kit for a few pieces from MacKenzie-Childs it made the world of a difference. Every dish I’ve made since has turned out great. And I just love the way the pieces add so much character to our apartment.

I like to think I’m a pretty good cook, but I’m definitely not an expert. I love taking popular dishes and finding ways to make them a bit healthier. Skinny Mac n’ Cheese is hands down one of my favorites, and the recipe I’ll be sharing with you today. It is so easy to make, and it tastes delicious! It’s a great meal on its own but it’s also great to bring to parties or serve as a side.
